  • Cook the pasta as instructed on the package.
  • Cut the salmon into cubes.
  • Cut the red onion into slices, finely chop the garlic, and cut the zucchini, carrots and red pepper into strips.
  • Add oil to the frying pan and fry the vegetables for a few minutes, add the salmon pieces and continue to cook for a few minutes until the salmon is fried on the outside and a little raw on the inside.
  • Strain the pasta and turn in the fried vegetables and salmon, and season with salt, pepper and a squeeze of lemon juice.
  • Top with a sprinkle of parsley before serving.
