Preparation
- Cook the pasta as instructed on the package.
- Cut the salmon into cubes.
- Cut the red onion into slices, finely chop the garlic, and cut the zucchini, carrots and red pepper into strips.
- Add oil to the frying pan and fry the vegetables for a few minutes, add the salmon pieces and continue to cook for a few minutes until the salmon is fried on the outside and a little raw on the inside.
- Strain the pasta and turn in the fried vegetables and salmon, and season with salt, pepper and a squeeze of lemon juice.
- Top with a sprinkle of parsley before serving.
