Norwegian salmon tataki with Ponzu and vegetables

This salmon tataki is a wonderful dish with quick seared Norwegian salmon, served with a delicious ponzu sauce. Perfect as a starter or a fresh dinner!

  • Grate the ginger and finely chop the chili. Mix together with the rest of the ingredients for the Ponzu sauce.
  • Mix the lemon juice with the soya sauce, turn the salmon loin in the marinade and let it steep for 10 minutes.
  • Pan fry the marinated salmon for about 1 minute on each side in a hot frying pan with oil. Let the salmon cool down a little before cutting it.
  • Cut the cucumber into long strips.
  • Chop up the sugar snap peas and spring onions, and lightly pan fry them.
  • Garnish the cucumber, sugar snap peas, spring onions and edamame beans on a dish.
  • Cut the salmon into slices approx. 1 cm wide, and lay them on top of the vegetables.
  • Sprinkle with sesame seeds and serve with the Ponzu sauce on the side.
