- Dice the salmon and mix with salt and sugar.
- Add olive oil and let cure for 15 minutes. Finely-chopped dill can be added to the marinade if you want to add some flavour.
- Mix crème fraîche with finely-shredded horse radish, and whisk into a light and airy texture. Season with salt, pepper and a little lemon juice.
- Serve the marinated salmon with freshly-toasted ryebread. Garnish with thin rings of red onion, dill, lemon zest and a small green salad on the side.
