- Preheat the oven to 180C. Top and bottom heat
- Divide the small potatoes in half, turn them in salt, pepper and olive oil and spread them over a oven tray. Bake them in the oven until they are tender. This will take 30-40 minutes, depending on the size of the potatoes.
- Chop all the ingredients for the salsa verde by hand or by using a food processor. Blend the olive oil and white wine vinegar into the seasoning and taste with salt and pepper.
- Cut squash into slices.
- Cut off the bottom piece of the asparagus, about 1/5 of the asparagus.
- Cut the salmon into serving pieces and add a little salt and pepper on the salmon. Fry the filet-side of the salmon first in the griddle pan in neutral oil for approximately 1-2 minutes on the filet side, turn and fry the skin-side for 2-3 minutes.
- Let the salmon rest while you grill the vegetables for a few minutes on each side as well.
- Serve the salmon fillet with vegetables, fried potatoes and top with a spoonful of salsa verde.
