- Slice the onion and cut of the stem of the shimeji mushrooms
- Melt butter in a frying pan and saute the onions. Add the shimeji mushrooms and fry further.
- Add the ponzu sauce and water, and simmer lightly
- Season the salmon fillets with salt and pepper
- Heat the cooking oil in a pan and fry the fillets for 2-4 minutes on each side
- Serve the salmon with mushroom ponzu sauce and serve with watercress and radish.
- Serve with rice on the side if you like
