Preparation
Marinade
- Slice fresh Norwegian salmon into 4cm cubes.
- Mix all the marinade ingredients except for the Norwegian salmon and onion in a mixing bowl and let it sit in the refrigerator for 30 mins.
Seaweed Puree
- Place all the seaweed puree ingredients in a pot and stir-fry until the seaweed loosens.
Poke
- Dice the cucumber into 2cm cubes.
- Dice the red onion into 2cm cubes and soak in cold water.
- Put the salmon and finely chopped onion in the marinade.
- Cook brown rice.
- Mix brown rice and seaweed puree and place in a bowl.
- Place the rest of the ingredients around and place the Norwegian salmon in the middle.
- Sprinkle with radish, fried onion, black sesame, and sriracha sauce to finish.
