Norwegian Salmon Poke with Seaweed Puree

Mix fresh Norwegian salmon with a variety of vegetables to make a flavourful and textured poke.

Preparation

Marinade

  • Slice fresh Norwegian salmon into 4cm cubes.
  • Mix all the marinade ingredients except for the Norwegian salmon and onion in a mixing bowl and let it sit in the refrigerator for 30 mins.

Seaweed Puree

  • Place all the seaweed puree ingredients in a pot and stir-fry until the seaweed loosens.

Poke

  • Dice the cucumber into 2cm cubes.
  • Dice the red onion into 2cm cubes and soak in cold water.
  • Put the salmon and finely chopped onion in the marinade.
  • Cook brown rice.
  • Mix brown rice and seaweed puree and place in a bowl.
  • Place the rest of the ingredients around and place the Norwegian salmon in the middle.
  • Sprinkle with radish, fried onion, black sesame, and sriracha sauce to finish.
