Preparation
- Preheat the oven to 200 °C.
- Press the juice from the lemon and lime, and mix together with the honey, mustard and paprika powder. Season with pepper to taste.
- Sprinkle the salmon fillet with salt. Place it in a greased, ovenproof dish.
- Pour the marinade over the fish and bake in the oven for approx. 8 minutes.
Couscous salad
- Cook the couscous according to the packet instructions.
- Add the butter, and use a fork to break up the couscous a little.
- Add the frozen peas while the couscous is still warm. Allow to stand until the peas are warmed through.
- Slice the red onion into thin strips, and tear the lettuce into smaller pieces. Toss the red onion and salad with the couscous.
- Season with salt and pepper to taste, and stir in a little good quality olive oil.
Tip: Norwegian salmon is delicious if it is not completely cooked through - it should preferably still be a little raw in the middle when you take it out of the oven.
