- Roughly chop the cornflakes and mix them with the parsley, lemon zest, and salt and pepper to taste.
- Cut the salmon filet into 4 pieces. Coat with the cornflakes and place on baking parchment. Bake in a pre-heated oven for around 10 minutes.
- Meanwhile, wash the spinach and season with orange and lemon juice, extra virgin olive oil, and salt and pepper to taste.
- Serve the salmon on the bed of baby spinach.
Useful tip: The cornflake coating can be replaced with coarsely chopped stale bread. Various herbs and spices can be added to the coating depending on personal taste.
