Preparation
- Heat the grill.
- Scrape the salmon skin free from scales, rinse and dry the fillet.
- Finely chop garlic and crush the crispy onion with a spoon.
- Mix all the ingredients for the spice mix.
- Make small cuts in the meat and rub in the spice mix.
- Grill salmon with skin side down on the grill for about 15 minutes.
- You can also prepare the fish in a parcel of aluminium foil. Place the salmon on a sheet of grill foil and fold the foil around the fish. Lay it on the grill and put a lid on if you have. Leave the salmon on the grill for about 15 minutes.
Mango salad
- Cut mango in small dices and finely chop chili.
- Pick leaves of the coriander and mix with the other ingredients for the salad.
- Taste with salt and pepper.
- Serve the grilled salmon with mango salad on the side.
