Grilled Norwegian salmon with Caribbean spices is a delicious summer recipe that quickly can become a favourite. Serve it with a mango salad on the side for a fresh and healthy meal.

Preparation

  • Heat the grill.
  • Scrape the salmon skin free from scales, rinse and dry the fillet.
  • Finely chop garlic and crush the crispy onion with a spoon.
  • Mix all the ingredients for the spice mix.
  • Make small cuts in the meat and rub in the spice mix.
  • Grill salmon with skin side down on the grill for about 15 minutes.
  • You can also prepare the fish in a parcel of aluminium foil. Place the salmon on a sheet of grill foil and fold the foil around the fish. Lay it on the grill and put a lid on if you have. Leave the salmon on the grill for about 15 minutes.

Mango salad

  • Cut mango in small dices and finely chop chili.
  • Pick leaves of the coriander and mix with the other ingredients for the salad.
  • Taste with salt and pepper.
  • Serve the grilled salmon with mango salad on the side.
