Preparation
Clay pot rice
- Rinse the rice twice in water, and then soak the rice for 1 hour, then drain the rice
- Pour in a tsp of oil in the clay pot
- Add your soaked rice and the water, jiggle it to make it even
- Heat the clay pot medium-high heat and cover for approx. 20-30 minutes
- Stir gently once in a while, until there is no water left in the pot
- Add a tbsp oil along the edges of the pot to accentuate the crust
- Cover and cook over low heat for approx. 15 minutes
Salmon
- Pat dry the salmon fillets with a paper towel.
- Heat oil in a pan to medium-high heat.
- Season the salmon with salt and pepper.
- Fry the salmon skin side down for 5 minutes.
- Turn the fillet and cook for 2 more minutes.
- While the rice is cooking, mix all ingredients for the sauce.
Serving
- Serve the rice with the salmon and toppings, and pour over the sauce
