Clay pot rice with Norwegian salmon

The perfect dinner for a cosy night in with Norwegian salmon!

Preparation

Clay pot rice

  • Rinse the rice twice in water, and then soak the rice for 1 hour, then drain the rice
  • Pour in a tsp of oil in the clay pot
  • Add your soaked rice and the water, jiggle it to make it even
  • Heat the clay pot medium-high heat and cover for approx. 20-30 minutes
  • Stir gently once in a while, until there is no water left in the pot
  • Add a tbsp oil along the edges of the pot to accentuate the crust
  • Cover and cook over low heat for approx. 15 minutes

Salmon

  • Pat dry the salmon fillets with a paper towel.
  • Heat oil in a pan to medium-high heat.
  • Season the salmon with salt and pepper.
  • Fry the salmon skin side down for 5 minutes.
  • Turn the fillet and cook for 2 more minutes.
  • While the rice is cooking, mix all ingredients for the sauce.

Serving

  • Serve the rice with the salmon and toppings, and pour over the sauce
