Preparation
- Heat the barbecue.
- Cut salmon fillet into cubes of approx. 3 cm, put them in a bowl and add canola oil.
- Turn the pieces so they are covered in oil and thread salmon pieces on a skewer.
- Sprinkle with salt and pepper, and barbeque salmon skewers approx. 2 minutes on each side.
Gremolata
- Finely chop the parsley and garlic.
- Wash and dry the lemon and grate the outer yellow skin of lemon.
- Mix the lemon zest, parsley and garlic.
- Serve salmon skewers with gremolata.
Tip: If using wooden skewers soak them in water for approx. 30 minutes before use.
