Preparation
- Make the sauce by mixing together all of the sauce ingredients in a bowl.
- Boil the noodles according to the instructions on the packet and place them in another bowl. Pour over a little of the sauce to let them take on the flavour and save the rest.
- Toast the chopped cashew nuts and sesame seeds in a dry frying pan and set aside.
- Chop the vegetables and wok-fry them in oil together with a crushed clove of garlic.
- Add the prawns towards the end and then add the rest of the sauce.
- Divide the noodles across four plates and place the vegetables and prawns on top.
- Garnish with the nuts, sesame seeds and fresh coriander.
