Preheat the oven to 180°C.

Cut the red onion, carrot and celery into thin slices and split the broccoli into small florets.

Place the vegetables into a greased ovenproof dish and sprinkle with a little salt.

Mix the fish stock and single cream, pour over the vegetables and bake in the centre of the oven for 10 minutes.

Remove the dish and place the halibut fillet on top of the vegetables.

Finely chop the garlic and sprinkle it over the fish along with salt, pepper and olive oil. Bake for a further 12 minutes or so.

Serve the oven-baked halibut with boiled potatoes.
Tip: Use a meat thermometer in the thickest part of the halibut. Remove the dish when the meat thermometer shows 48°C and leave on the worktop to rest until it has reached 52°C.
