Preparation
- Combine water and salt to a brine and pour over the halibut slices. Leave for approx. 10 minutes.
- Remove the halibut from the brine and dry with a paper towel.
- Brush with olive oil and grill for approx. 2-3 minutes on each side.
- Cut peppers in wide strips, and zucchini and eggplant in slices. Leave the asparagus whole.
- Brush the vegetables with olive oil and grill with the halibut.
- Sprinkle with salt and pepper.
- Serve halibut with the grilled vegetables and bread on the side.
