- Mix the ingredients for the marinade in a pan, bring to the boil and cook for five minutes. Leave to cool.
- Brush the mackerel fillets several times with the marinade.
- Fry the fillets in a grill pan or grill them on a barbecue for two minutes each side.
- Serve the mackerel warm with jasmine rice, salad and the rest of the marinade on the side.
