Quinoa Salad with Pepper-Smoked Norwegian Mackerel

Preparation

  • Cut pepper-smoked mackerel in small pieces.
  • Cook quinoa as instructed on the package and cool.
  • Cut cucumber in thin slices, red onion in thin wedges and bell pepper and apple in dices.
  • Cut the salad and mix with mackerel, quinoa and the other ingredients for the salad.

Dressing

  • Mash feta and mix with olive oil, lemon juice and apple jucie.
  • Taste with salt and cayenne pepper, and add chopped parsley.
  • Serve the salad with the dressing.
