Preparation
- Cut pepper-smoked mackerel in small pieces.
- Cook quinoa as instructed on the package and cool.
- Cut cucumber in thin slices, red onion in thin wedges and bell pepper and apple in dices.
- Cut the salad and mix with mackerel, quinoa and the other ingredients for the salad.
Dressing
- Mash feta and mix with olive oil, lemon juice and apple jucie.
- Taste with salt and cayenne pepper, and add chopped parsley.
- Serve the salad with the dressing.
