Norwegian herring with vadouvan and plantain

Preparation

  • Peel the plantain and cut into slices.
  • Bring to the boil in the vegetable stock with the vadouvan (finely chopped), cover with a lid and simmer for 15 minutes.
  • Strain the stock through a fine sieve.
  • Finely dice the papaya and mix with the other ingredients. Arrange the plantain on a plate and place the herring on top.
  • Spread the papaya cubes around and pour over the cooking stock.
  • Top with the pea shoots and sprinkle with vadouvan.
