Preparation
- Peel the plantain and cut into slices.
- Bring to the boil in the vegetable stock with the vadouvan (finely chopped), cover with a lid and simmer for 15 minutes.
- Strain the stock through a fine sieve.
- Finely dice the papaya and mix with the other ingredients. Arrange the plantain on a plate and place the herring on top.
- Spread the papaya cubes around and pour over the cooking stock.
- Top with the pea shoots and sprinkle with vadouvan.
