Preparation
- Mix the ingredients for the sauce and pour into a squeeze bottle.
- Let the rind puff up in the hot sunflower oil and then remove.
- Drain a little in a sieve, season lightly and mix in the lime zest.
- Stir the ingredients into a vinaigrette and season to taste.
- Let the bean sprouts and peppers marinate in the vinaigrette.
- Lay out the fillets and drizzle with the liquorice sauce.
- Mix the marinated sprouts with the popcorn and spread over the fillets.
- Dust with the powder and serve.
