- Use a blowtorch to scorch the fillets and keep warm.
- Mix the butter with the other ingredients and emulsify. Remove from the heat.
- Peel the apple and cut into small cubes. Discard the core. Marinate with the other ingredients and season.
- Spread the brown butter and place the fillets on top.
- Add the apple before finally sprinkling with the Panko breadcrumbs and lime zest.
