Norwegian herring tacos with tomato salsa

Everyone likes tacos! A new dish in the "Herring re:invented" series by René Stein, featuring unusual ingredients that allow the herring to shine in a whole new light.

  • Cut herring fillets into segments.
  • Finely dice the onions. Finely dice the tomatoes and mix with the onions. Finely chop some coriander with the stalks and stir in. Season with salt, lemon, chilli and olive oil. Set aside the remaining coriander to use as a garnish.
  • Mix the flour, oil, salt and water in a bowl to form a smooth dough and wrap in cling film. Leave to rest in the fridge for 20 minutes and then cut into 8 equal pieces. Roll out into thin tacos and fry in a non-stick pan without oil.
  • Mix the herring with the salsa, fill the tacos and sprinkle with coriander.
