Skewers with Norwegian herring and herbs and vegetables on the side. This is a good summer dish that also can be pan-fried.
Soak the wooden skewers for approx. 20 minutes.
Thread the herring fillets on the skewers and sprinkle with salt and pepper.
Grill the skewers for approx. 1 minute on each side.
Finely chop olives, gherkin, capers, garlic and parsley, and mix with olive oil.
Taste with lemon juice.
Serve the skewers with the relish and lemon zest as garnish.
