Skewers with Norwegian Herring

Skewers with Norwegian herring and herbs and vegetables on the side. This is a good summer dish that also can be pan-fried.

Procedure

  • Soak the wooden skewers for approx. 20 minutes.

  • Thread the herring fillets on the skewers and sprinkle with salt and pepper.

  • Grill the skewers for approx. 1 minute on each side.

Relish

  • Finely chop olives, gherkin, capers, garlic and parsley, and mix with olive oil.

  • Taste with lemon juice.

Serve the skewers with the relish and lemon zest as garnish.
