Norwegian halibut is a firm fish and perfect for grilling. In this recipe it's served with colourful vegetables.
Combine water and salt to a brine and pour over the halibut slices. Leave for approx. 10 minutes.
Remove the halibut from the brine and dry with a paper towel.
Brush with olive oil and grill for approx. 2-3 minutes on each side.
Cut peppers in wide strips, and zucchini and eggplant in slices. Leave the asparagus whole.
Brush the vegetables with olive oil and grill with the halibut.
Sprinkle with salt and pepper.
Serve halibut with the grilled vegetables and bread on the side.
