Preparation
Cut the smoked Fjord Trout into thin slices.
Cream goat cheese cream
Finely chop chives and mix with the rest of the ingredients for the cream.
Taste with salt and pepper.
Sauce
Combine all the ingredients for the sauce.
Taste with salt and pepper.
Spread a thin layer of the goat cheese cream on the griddle cakes, place slices of Fjord Trout over and spread with a thin layer of sauce.
Top with rocket.
Roll the griddle cake together, cut into suitable bites and serve.
