Preparation
Cut the Fjord Trout in half along and cut each piece in slices of 2 mm. Every slice should be a mouthful.
Zest and juice lime and drizzle lime juice over the Fjord Trout.
Sprinkle with a little salt and pepper.
Avocado cream
Cut avocado in half, remove the seed and take out the avocadomeat with a spoon.
Mash the avocado to a even mash with olive oil.
Juice lemon, and taste the mash with lemon juice, salt and pepper.
Put a little avocado cream on each Fjord Trout piece, garnish with lime zest and fresh herbs, and serve.
