Preparation
Sprinkle salt on the Fjord Trout and leave for 10-15 minutes.
Rinse off the salt, gently dry with a paper towel and cut into portions.
Brush the Fjord Trout with olive oil and sprinkle with pepper.
Grill for 3-4 minutes on each side.
Avocado salsa
Cut avocado and tomato in small dices, and finely chop red onion, garlic and chili.
Zest and juice lime.
Mix the ingredients, add olive oil and taste with salt and pepper.
Keep in the refrigerator until serving.
Serve with
Cook lentils as instructed on the package.
Drain well and add olive oil.
Finely chop parsley and basil, juice lemon and add to the lentils.
Season with salt and pepper to taste, and keep covered with a lid until serving.
Serve freshly grilled Fjord Trout with avocado salsa and lentils.
Tip: The Fjord Trout can also be cook on a griddle pan.
