Preparation
Slice the Fjord Trout in thin slices and place on a serving plate.
Marinade
Crush the fennel seeds, mix with the other ingredients and season with salt and pepper.
Brush the Fjord Trout with the marinade 10-15 minutes before serving and leave in room temperature.
Salsa
Dice mango and red onion, and finely chop chives and parsley.
Mix together mango and onion with herbs, capers and oil.
Season with salt, pepper, sugar and lemon juice.
Serve the Fjord Trout ceviche the with salsa on the side.
