- Cut the zucchini into cubes and the red onion into rough wedges.
- Place in an oven-proof dish.
- Top with cherry tomatoes and coarsely chopped garlic.
- Pour over a good-quality olive oil.
- Dice the cod into cubes.
- Season with salt and pepper and top with the cod.
- Bake in the oven at 200 degrees for about 20 minutes.
- Top with crumbled feta cheese and oregano.
- Serve with tzatziki and fresh crusty bread.
Tip: Goes well with kalamata olives.
