Preparation
- Cut the fish into even servings.
- Whisk egg together.
- Dredge the cod in flour, then in egg and at last in breadcrumbs.
- Sprinkle with salt and pepper.
- Pan-fry the cod on a warm pan in butter and rapeseed oil, 3-4 minutes on each side.
Mashed potatoes
- Peel potato, dice and cook tender in unsalted water.
- Mash the potato and mix with butter and milk to a nice consistency.
- Taste with salt and pepper.
- Serve the cod with mashed potatoes, pickled gherkins, sour cream and crispy fried onion.
