Heat the frying oil at 175°C.

In the meantime, prepare the batter by mixing the flour with sparkling water.

In a separate bowl, combine the puffed rice and breadcrumbs.

Dip the fish in the batter and then in the breadcrumbs and puffed rice mix.

Fry for a couple of minutes, until golden and crispy.
