Try this recipe with pan-fried Norwegian cod and a mild tomato and basil mix. It is a recipe for the whole family.
Cut the cod into servings and dry well with a paper towel.
Mix flour, salt and pepper in a bowl and dregde the fish in the mix.
Pan-fry the fish in butter on medium heat approx. 5 minutes on each side.
Cut tomatoes into small dices, basil in thins strips, finely chop garlic and cut olives in half.
Heat olive oil in a casserole and add tomato, basil and garlic.
Add olives and taste with salt and pepper.
Serve the cod with sauce, rice and lemon wedges on the side.
