Mashed potatoes à la Brandad

Pickled red onion

Procedure

  • Cut the Skrei in servings, sprinkle with salt and leace for 7 minutes.

  • Rinse in cold water and gently dry with a paper towel.

  • Pan-fry the Skrei in margarine until it has a golden crust.

  • Add butter, turn the fish, set down the heat and fry for 5 minutes before serving.

Mashed potatoes à la Brandad

  • Sprinkle the Skrei wtih salt and leave for 20 minutes.

  • Rinse in cold water and cook in unsalted water.

  • Peel potatoes and cook tender in unsalted water.

  • Drain and let the potatoes steam until dry.

  • Mash the potatoes with butter.

  • Flake the cooked fish and gently fold into the mashed potatoes.

  • Heat up the mash and mix well.

Pickled red onion

  • Cut red onion in wedges and sauté tender in butter.

  • Add sugar and white wine vinegar, and let simmer for a couple of minutes.

  • Taste with cayenne pepper and salt. Add rocket right before serving.

Serve the Skrei with mashed potatoes à la Brandad and pickled red onion.
