Parmesan Baked Norwegian Salmon with Tomato Salad

Parmesan is a great, diverse cheese. In this recipe you bake salmon with a lid of grated parmesan and serve it with salad and pasta. A balanced dinner.

Preparation

  • Preheat the oven to 180°C.

  • Cut the salmon into suitable portions, sprinkle with salt and put in an oiled oven dish. Drizzle with olive oil.

  • Grate parmesan and sprinkle over the salmon. 

  • Bake in the oven for about 15 minutes.

Tomato salad

  • Cut tomato in wedges, onion in thin slices and cucumber in cubes.

  • Mix together olive oil and balsamic vinegar. Season with a little salt and pepper.

  • Pour the dressing over the salad and stir gently.

Serve the salmon with the tomato salad and pasta of your choice.
