Parmesan is a great, diverse cheese. In this recipe you bake salmon with a lid of grated parmesan and serve it with salad and pasta. A balanced dinner.
Preheat the oven to 180°C.
Cut the salmon into suitable portions, sprinkle with salt and put in an oiled oven dish. Drizzle with olive oil.
Grate parmesan and sprinkle over the salmon.
Bake in the oven for about 15 minutes.
Cut tomato in wedges, onion in thin slices and cucumber in cubes.
Mix together olive oil and balsamic vinegar. Season with a little salt and pepper.
Pour the dressing over the salad and stir gently.
Serve the salmon with the tomato salad and pasta of your choice.
