This recipe is both simple and good, and made in one dish. Norwegian salmon with mushrooms and dill is a successful combination.
Preheat the oven to 160 °C.
Cut the salmon in portions, drip with olive oil and lemon juice and sprinkle with salt and pepper.
Slice the mushroom, pan-fry in butter and sprinkle with salt and pepper.
Place the mushroom in a greased oven-proof dish with dill and lay the salmon over.
Put a cooking thermometer in the thickest part of the salmon, cover with aluminium foil and bake in the oven until the fish has a core temperature of 40 °C.
Serve with salmon roe on top, and rice on the side.
