Norwegian Salmon Burgers with Homemade Mayonnaise

With homemade burger buns and lemon mayonnaise the Norwegian salmon burger gets extra tasty. It's a fresh and healthy dinner for the family.

Ingredients

Preparation

  • Preheat the oven to 220 °C.

  • Finely chop the salmon and parsley, and mix with salt and pepper.

  • Make one burger for each portion and pan-fry on medium heat in margarine for 2-3 minutes on each side.

Burger buns

  • Stir the yeast out in lukewarm water and mix with wheat flour, olive oil and salt.

  • Knead the dough and let rise to double size. The dough should be airy.

  • Divide the dough into even pieces and make flat buns.

  • Place the buns on a baking tray with baking paper, brush with milk and sprinkle with sesame seeds.

  • Then buns should rise to double sizem then bake in the oven for approx. 10 minutes.

Mayonnaise

  • Mix egg yolk and mustard.

  • Add olive oil gently while continuously whisking. If the mayonnaise gets too thick you add a little water.

  • Taste with lemon juice, salt and pepper.

Serve the salmon burgers in warm burger buns with mayonnaise, cucumber and salad.
