With homemade burger buns and lemon mayonnaise the Norwegian salmon burger gets extra tasty. It's a fresh and healthy dinner for the family.
Preheat the oven to 220 °C.
Finely chop the salmon and parsley, and mix with salt and pepper.
Make one burger for each portion and pan-fry on medium heat in margarine for 2-3 minutes on each side.
Stir the yeast out in lukewarm water and mix with wheat flour, olive oil and salt.
Knead the dough and let rise to double size. The dough should be airy.
Divide the dough into even pieces and make flat buns.
Place the buns on a baking tray with baking paper, brush with milk and sprinkle with sesame seeds.
Then buns should rise to double sizem then bake in the oven for approx. 10 minutes.
Mix egg yolk and mustard.
Add olive oil gently while continuously whisking. If the mayonnaise gets too thick you add a little water.
Taste with lemon juice, salt and pepper.
Serve the salmon burgers in warm burger buns with mayonnaise, cucumber and salad.
