Marinated Oven Baked Norwegian Salmon with Couscous Salad

Marinate the Norwegian salmon fillet in homemade marinade with honey and Dijon mustard. Serve with couscous salad, and you have a fresh, healthy dinner on the table.

Preparation

  • Preheat the oven to 200 °C.
  • Press the juice from the lemon and lime, and mix together with the honey, mustard and paprika powder. Season with pepper to taste.
  • Sprinkle the salmon fillet with salt. Place it in a greased, ovenproof dish.
  • Pour the marinade over the fish and bake in the oven for approx. 8 minutes.

Couscous salad

  • Cook the couscous according to the packet instructions.
  • Add the butter, and use a fork to break up the couscous a little.
  • Add the frozen peas while the couscous is still warm. Allow to stand until the peas are warmed through.
  • Slice the red onion into thin strips, and tear the lettuce into smaller pieces. Toss the red onion and salad with the couscous.
  • Season with salt and pepper to taste, and stir in a little good quality olive oil.

Tip: Norwegian salmon is delicious if it is not completely cooked through - it should preferably still be a little raw in the middle when you take it out of the oven.
