Roughly chop the cornflakes and mix them with the parsley, lemon zest, and salt and pepper to taste.
Cut the salmon filet into 4 pieces. Coat with the cornflakes and place on baking parchment. Bake in a pre-heated oven for around 10 minutes.
Meanwhile, wash the spinach and season with orange and lemon juice, extra virgin olive oil, and salt and pepper to taste.
Serve the salmon on the bed of baby spinach.
The cornflake coating can be replaced with coarsely chopped stale bread. Various herbs and spices can be added to the coating depending on personal taste.
