Chiara Maci's Norwegian salmon salad with green beans, potatoes and black olives

  • Boil the green beans and peeled potatoes in salted water.

  • Meanwhile, pit the black olives and chop the chives finely.

  • Cut the salmon into fairly large rectangular pieces, coat with sesame seeds and sear in a pan for 5 minutes.

  • Mix the green beans with the cubed potatoes, black olives and chives in a bowl and season with extra virgin olive oil, salt and pepper.

  • Serve the salad with the salmon pieces on top.

Useful tip

The green beans can be replaced with Romanesco cauliflower when in season.
