Cut pepper-smoked mackerel in small pieces.
Cook quinoa as instructed on the package and cool.
Cut cucumber in thin slices, red onion in thin wedges and bell pepper and apple in dices.
Cut the salad and mix with mackerel, quinoa and the other ingredients for the salad.
Mash feta and mix with olive oil, lemon juice and apple jucie.
Taste with salt and cayenne pepper, and add chopped parsley.
