Grilled Norwegian Mackerel with Zucchini and Tomato

Grilled mackerel is a typical summer dish. In this recipe the mackerel is seasoned with salt, pepper and lemon, and the vegetables with rosemary which gives it a sweet, exotic touch.

  • Cut mackerel into portions.

  • Sprinkle with salt, pepper and lemon juice, and brush with oil.

  • Fry on the grill for approx. 2 minutes on each side.

  • Cut zucchini in long, thin slices with a cheese slicer or a knife, and cut tomato in half.

  • Brush the vegetables with oil, sprinkle with rosemary and fry on the grill next to the mackerel.

Serve grilled mackerel with vegetables, potato salad and bread.
