Grilled mackerel is a typical summer dish. In this recipe the mackerel is seasoned with salt, pepper and lemon, and the vegetables with rosemary which gives it a sweet, exotic touch.
Cut mackerel into portions.
Sprinkle with salt, pepper and lemon juice, and brush with oil.
Fry on the grill for approx. 2 minutes on each side.
Cut zucchini in long, thin slices with a cheese slicer or a knife, and cut tomato in half.
Brush the vegetables with oil, sprinkle with rosemary and fry on the grill next to the mackerel.
Serve grilled mackerel with vegetables, potato salad and bread.
