Tortilla Wraps with Norwegian Saithe

Lush, spicy tortilla wraps with fried saithe and salsa, served with homemade guacamole and sour cream.

Ingredients

Preparation

  • Cut the saithe in pieces of five centimetres and season with salt, pepper and taco seasoning.

  • Fry the fish in oil until golden.

  • Heat the tortilla according to instructions on the package. Wrap them in foil after heating to keep them moist until serving.

Salsa

  • Blanch the tomato by cutting a cross on top, immerse in boiling water for a couple of minutes and then immediately place in cold water. Remove the skin and seeds and finely chop the tomato.

  • Finely chop the chili.

  • Finely chop the onion and garlic and fry in olive oil until golden. Add tomatoes and chili and cook for 3-4 minutes.

  • Season with salt, pepper and sugar and stir in fresh coriander.

Guacamole

  • Blanch the tomato by cutting a cross on top, immerse in boiling water for a couple of minutes and then immediately place in cold water. Remove the skin and seeds and finely chop the tomato.

  • Halve the avocado in two, remove the stone and scoop out the avocado flesh.

  • Finely chop the garlic, spring onion and chili.

  • Mash the avocado with garlic and lime juice until smooth.

  • Gently stir in spring onion, chili, tomatoes and coriander. Season to taste with salt and pepper.

Fill the tortillas with saithe and salsa. Serve with guacamole and sour cream.
