Norwegian Halibut with Grilled Vegetables

Norwegian halibut is a firm fish and perfect for grilling. In this recipe it's served with colourful vegetables.

Preparation

  • Combine water and salt to a brine and pour over the halibut slices. Leave for approx. 10 minutes.
  • Remove the halibut from the brine and dry with a paper towel.
  • Brush with olive oil and grill for approx. 2-3 minutes on each side.
  • Cut peppers in wide strips, and zucchini and eggplant in slices. Leave the asparagus whole.
  • Brush the vegetables with olive oil and grill with the halibut.
  • Sprinkle with salt and pepper.
  • Serve halibut with the grilled vegetables and bread on the side.
