Norwegian Halibut with Cheese and Anchovy Topping

Make a small feast with a moist and tasteful Norwegian halibut. In this recipe it's baked with a cheese and anchovy topping and served with salad and dressing.

Ingredients

Preparation

  • Preheat the oven to 200 °C.

  • Cut the halibut in servings and place on a baking tray with baking paper.

Topping

  • Finely chop anchovy and mix with room temperature butter, breadcrumbs and grated cheese to an even mix.

  • Spread the mix over the halibut and bake in the oven for approx. 20 minutes. The core temperature should be 52 °C.

Salad

  • Thinly slice red onion, cut cherry tomato in half and tear the salad.

  • Dice bread and toss in olive oil and chopped dill.

  • Pan-fry the bread crispy and golden.

  • Combine red onion, cherry tomato, salad and bread.

Dressing

  • Combine egg yolk, mustard, anchovy and garlic in a food processor to an even mass.

  • Add soy oil a little at a time while the machine is running. It should start thickening.

  • Stir in crème fraîche.

Serve baked halibut with salad and dressing.
