Baked Skrei with Mediterranean flavours of garlic and tomato is a good dish to serve to family or friends. It doesn't take to long to make.
Preheat the oven to 200 °C.
Dice onion, cut tomato into slices and finely chop garlic and chili.
Sauté onion and garlic in a little olive oil until the onion is golden.
Add chili and tomato purée, and let simmer with the onion.
Pour in white wine and taste the sauce with sugar, salt and pepper.
Place the Skrei and tomato slices in an ovenproof dish.
Cover the fish with the sauce and drizzle with olive oil.
Bake in the oven for approx. 20 minutes.
Serve with bread on the side.
