Creating delicious stuffed dishes like Butterflied salmon with potato-broccoli puree is easy when you start with most-premium part of a Norwegian salmon fillet.

    Select the top loin section from the whole fillet.

    Cut lengthwise every 2–3 inches to create individual portions.

    Holding your knife horizontally, slice 90 percent of the way through the middle of a portion, crosswise. Make sure you do not cut all the way through as you need the two sides of the portion to stay connected.

    Flip open like a book.

    Add stuffing and close over.
