Grilled Norwegian Saithe with Dill Potatoes

Norwegian saithe grilled in foil is quick and easy. Chili and fresh herbs gives this recipe lovely flavors. Maybe it's a new grill favorite?

  • Cut the saithe into portions, and sprinkle with salt and pepper on all sides.

  • Finely chop dill, and cook the potatoes with a little over half of the dill.

  • Cut chili in strips, finely chop red onion, basil and parsley and mix with the rest of the dill.

  • Brush the aluminium foil with oil.

  • Spread half of the chili, onion and herbs on each foil, place the saithe over and cover with the rest of the chili, onion and herbs.

  • Drizzle with white wine, close the packets and place on the grill.

  • Grill until the fish is done, approx. 10 minutes.

Serve with dill potatoes on the side.
